The clean beans which were previously carefully selected, fermented and dried are then broken to loosen the shells from the nibs. The breaking process takes place in multiple steps to avoid an excess of fine particles, the nibs are then covered with coconut sugar of the highest quality, the result is a delicious and nutritional snack.
