High in the Peruvian Andes, between 2,000 and 3,000 meters above sea level, grows a small,
golden fruit with extraordinary power: Physalis peruviana, known around the world as goldenberry, cape gooseberry, aguaymanto, uchuva, or uvilla. I
t’s a superfruit celebrated for its high vitamin C content, antioxidants, and natural tangy-sweet flavor — but behind every handful
lies a story of human dedication, tradition, and precision.
Where It All Begins: In the Fields
Our journey begins in remote Andean communities, where goldenberries are carefully hand-harvested while still protected by their papery husks, known locally as capacho. The terrain is steep and rugged, and many farmers must carry heavy harvest sacks, or javas, down narrow mountain paths — sometimes walking for hours — just to reach a collection point. This work, done with patience and deep knowledge passed down through generations, is the cornerstone of the goldenberry’s journey.
Precision and Care at the Processing Plant
Once collected, the fruit travels to a processing facility where quality, safety, and traceability guide every step. Here, the husks are manually removed — a meticulous process that requires both time and skill. The fruits are then carefully sorted by size and quality before entering controlled drying chambers, where moisture is reduced while nutrients and natural sweetness are concentrated.
